Today I want to share with you one of my favorite breakfasts. Generally, I am a breakfast enthusiast. So I love me some variation when it comes to my favorite meal of the day. But, when I am in a hurry, a quick bowl with some greek yogurt, some fruits and some homemade, energy-boosting granola is always my favorite to start the day.
Granola is incredible easy to make at home, you can control the amount of sugar and by adding nuts and seeds it contains added healthy protein.
Don’t worry too much about being exact. The basic recipe below is flexible, which is the biggest benefit of it all: you can use good ingredients and customize the granola to be exactly the way you like it. Sounds like a super delicious thing, huh?!
350 gr. oats
75 gr. peanuts
75 gr. sunflower seeds
75 gr. goji berries (buy them here)
45 gr. chia seeds
40 ml. honey
20 gr. brown sugar
40 ml. vegetable oil
pinch of sea salt
1-Combine all ingredients except the goji berries in a large mixing bowl. Stir until every ingredient is distributed in the mix.
2-Spread the mixture out evenly on a rimmed baking sheet.
3-Bake in the preheated oven until crispy and toasted, about 15 minutes, then stir and continue baking until the granola is very light golden brown.
4-Cool the granola, then add the goji berries to the baking sheet and toss to combine.
5-Store the granola in an airtight container for up to 2 weeks.
6-Serve with almond milk, yogurt, fruits, froyo or whatever you like.
