I already mentioned that I love breakfast. It is my most favorite meal of the day and I try to substitute as much meals with breakfast as I can. As I am not a morning person though, my ideal breakfast has to be quick, delicious and healthy somehow. Besides of my beloved homemade granola (which you should definitely try) there is another breakfast bowl filled with superfood that I love – the chia pudding.
I know, i know, it’s 2016 – already everybody knows that chia seeds, being the superfood they are, are a great plant based source of omega 3 and 6. They are full of antioxidants and fiber and contain a high amount of protein. But, one can never emphasis these benefits enough, I guess.
They can be eaten raw, soaked in milk or juices or added to puddings. The seeds themselves taste rather bland, but as they absorb up to ten to twelve times their weight in water, they totally shine when used the right way.

Today I am going to share with you my basic chia pudding recipe as it is the one I make the most often. This is so great, it takes just a few minutes to throw together before going to bed and you will be more than thankful the next morning for this sweet, but not overly sweet breakfast ready to be enjoyed. Also, this recipe is very versatile in flavors and toppings. You can for example substitute the almond and coconut milk mix with your favorite milk. The next morning you sprinkle the pudding with whatever toppings you like. Mostly I end up with some fresh berries, some blended ones and usually add some granola.
50 gr chia seeds
125 ml almond milk
125ml coconut milk
1 tsp vanilla extract
2 tsp honey
1- Combine the chia seeds, the vanilla extract, the honey and the milk in a small bowl. Stir a little bit and leave it to sit for a few minutes. Then whisk again to break up any lumps.
2- Leave it for half an hour or overnight to fully absorb the liquid.
3- Serve the pudding with whatever you like and enjoy.
