If you’re something like me or like Oprah, you can’t keep your hands to yourself when it comes to bread.
And you know what?! There is nothing wrong with that. There is nothing unhealthy about bread if it is packed with flavorful and healthy ingredients. Just like this banana bread.
You guys, this delicious healthy banana bread with chocolate chips is so moist and sweet. If you try this, you definitely win in life.
It is not only a bread but can also be a dessert (topped with some greek yogurt!), a breakfast (on-the-go!) or your afternoon pick-me-up (topped with some greek yogurt plus goji-berries). So help yourself and bake this moisty, flavorful, chocolate-bursting piece of gold.
You can modify this recipe to your own personal taste. Just add some pecans, coconut or zucchini. Replace the bittersweet chocolate with some cocoa-nips, or, you name it.
3 ripe bananas
180gr. spelt flour
2 large eggs (or 3 smaller ones)
50ml nut milk
100 gr. agave syrup
150gr. coconut oil
1½ tsp baking powder
½ tsp salt
1 tsp cinnamon
½ tsp nutmeg
1 vanilla bean = 1 tsp vanilla extract
1 cup 70% bittersweet chocolate (chips)
1- Preheat oven to 175°C. Grease a loaf pan or line it with parchment paper and set aside.
2- In a bowl mash the bananas as best as you can.
3- Whisk together the dry ingredients: flour, baking powder, salt, cinnamon and nutmeg.
4- Beat together the agave syrup and coconut oil in large mixing bowl. Add in eggs, the bananas and the vanilla pulp (if you’re using a vanilla bean: split it in half and scrape out the pulp) and the milk. Beat until everything is smooth.
5- Now add the dry ingredients. Do this in a few parts, always mixing until smooth after each addition. At last gently fold the chocolate chips and nuts into the batter.
6- Pour the batter into the prepared loaf pan. Bake for about 1 hour or until a toothpick inserted in the middle comes out clean.
Allow it to cool for about 15 minutes in the pan and then transfer it to a wire rack to cool completely.
